Easy Egg White Muffin Recipe

Happy Monday y’all! Wow has it been a while since I’ve posted on here and let alone on a Monday. I spent my weekend with my parents, finally getting everything out of my old apartment and into my new one – but more on that in a different post. Today I’m doing something highly requested! Since I’ve been posting more of what I cook/prep on a Insta stories I’ve received a ton of requests to post these types on things on the blog! So today I’m sharing a super easy egg muffin recipe that you can prep on a Sunday and have everyday throughout the week! Would love to hear if this is something you guys would like to see more of!

Ingredients:
2 Cups of Egg Whites (1 egg yolk)
10 Quartered Cherry Tomatoes
1 Chopped Handful of Spinach
Crumbled Goat Cheese
Trader Joes “Everything but the Bagel” Seasoning
Coconut Oil Spray

Instructions:
1. Preheat oven to 350 degrees.
2. Crack and separate eggs to fill 2 cups. (I use one egg yolk and whisk together with egg whites).
3. Quarter cherry tomatoes and chop the handful of spinach.
4. Spray muffin tin with coconut oil spray.
5. Pour the egg mixture into the muffin tins.
6. Sprinkle cherry tomatoes, spinach and goat cheese into each tin with egg mixture.
7. Top with Trader Joes EBTB seasoning.
8. Bake for 25 minutes.
9. Allow to cool, freeze in freezer safe Ziploc bags. (I take out one bag each night from the freezer and place in the fridge to de-frost. I’ll heat them up in the microwave for 30 seconds at work every morning).
