Easy Salmon Salad Recipe

Happy Wednesday y’all! I hope everyone is staying safe and healthy, and hopefully in a place with family at this point. I’m not going to dive into details sharing my thoughts/feelings on everything going on right now, but please know that I’m safe, working remotely from my parent’s house in Houston, and going about my day as is. In an effort to maintain some sense of normalcy, I’m focusing my efforts on finding a new normal routine at home, trying to get content pushed out, etc.

Something I mentioned previously is that I’m now on TikTok (much like the rest of the blogger world) and have been pushing out content on this new outlet vs. planning my IG content as much. I genuinely love how TikTok is more authentic as opposed to that carefully curated highlight reel that IG has turned into. You can follow me on TikTok HERE.

Yesterday, I shared my very simple lunch and it’s one of the best performing videos I’ve shared, so today I figured I would round up the recipe in a post. Note, I’m no food photographer, and honestly didn’t even think to get photos of my food, so this is more of a how-to breakdown rather than imagery focused.

Easy Salmon Salad Recipe:
Greens: I used spinach for this specific salad because I had it in my home. In NYC I would likely use kale or arugala, but any sort of greens works! I wanted my greens to be nicely chopped like a true New York salad would be, so I used a *very old* Pampered Chef chopper to help get the job done (if you grew up in Suburbia you KNOW Pampered Chef). WIlliams Sonoma has a very similar option HERE. I used about 4 handfuls of spinach to fill a small/medium mixing bowl.

Salmon: I had pre-prepped my salmon the day prior so I just heated up in the microwave, but I air fried my salmon at 400 degrees for 12 minutes. The air fryer that both my parents and I have can be found HERE. I season my salmon with:
-2 cloves minced garlic
-Trader Joe’s Everything but the Bagel Seasoning
-1 tsp of Garlic Salt
-A spray of spray oil

Brussel Sprouts: Another air fried confection that I absolutely love and could eat every single day. I air fry the brussels at 375 degrees for 12 minutes, take out and shake, and then back in for 6-8 minutes for that crispy texture. I season my brussels (shaking about every 20 minutes or so for an hour) with:
-Eyeball of Balsamic Vinegar
-Eyeball of agave or honey
-Hefty pinch of Red Pepper Flakes
-Garlic Salt
-Black Pepper
-Pending whether I have it or not, 2 TBSP of Italian Dressing

Assembling the salad: To assemble I placed the greens in first, followed by salmon. I added Italian dressing before I added the brussels in and I really loved how the Italian dressing tied it all together! If I had more time, I would mince garlic with lemon juice and olive oil for a bit of a healthier dressing.
